Hot Chilli Snails in Wine Sauce

Ingredients:
  • 1.5 lbs Small water snail 
  • 1 pc Shallot (minced)
  • 4 pcs Garlic (minced)
  • 6 pcs Ginger 
  • 2 pcs Chilli (Diced)

Seasoning:
  • 1 tbsp sugar
  • 1 tbsp Shacha paste
  • 1 tbsp Hot chili paste
  • 1/2 cup Shaoxing wine
  • 3/4 cup Water 
  • 1 tsp light soya sauce
  • 1 tbsp dark soy sauce
  • Sesame oil

Directions:
  1. Clean and drain the snails, blanch in boiling water with 3 pcs of ginger for a while. Remove. Clean with cold water.
  2. Heat a small pot, add sesame oil, add 3 pcs of ginger, stir a while, then add the minced shallot, minced garlic and diced chili, stir a while
  3. Add the snails and seasoning, mix well, cook with high heat until the sauce turn thicker, done
